ALOO TUK CHEESY FRIES TOWER

A traditional Sindhi dish of deep-fried smashed potatoes that are quick to cook and sprinkled with delicious spices. They have taken an international avatar, and now they have transformed into ALOO TUK CHEESY FRIES TOWER - Steak hand cut fries spiced with Tuk masala, drizzled with trendy sauces, plethora of cheese and so much more.
Ingredients
- Fried Sweet Potato - 10 Gms
- Juliennes - 10 Gms
- Shredded Mozarella Cheese - 20 Gms
- Shredded Yellow Cheddar Cheese - 20 Gms
- Shredded White Cheddar Cheese - 20 Gms
- Thousand Island Sauce - 30 Gms
- Sakura Cress - 2 Gms
- Pickled Jalapeno Slices - 5 Gms
- Aloo Tuk Cut Fries 350 Gms
- Ranch Sauce - 30 Gms
Aloo Tuk Cut Fries
- Long Size Potato - 4 Pcs
- Chilli Powder - 1 Tbsp
- Dried Mango Powder - 1 Tbsp
- Coriander Powder - 1 Tbsp
- Cumin Powder - ½ Tbsp
- Turmeric Powder - ½ Tbsp
- Salt To Taste
- Sunflower Oil for Frying
Method
1. To make the tuk masala, mix the spices in mixing bowl, season with salt, and set aside.
2. Peel and cut potato into steak fries size to 2 inch thickness.
3. Wash and soak the potatoes in water for 15-20 minutes.
4. Preheat a deep fat fryer or pan of sunflower oil to 180 degree celsius.
5. Fry the potatoes until they are golden brown and crisp.
6. Once cooked, generously sprinkle the fries with tuk masala.
7. Peel and cut sweet potato into fine juliennes.
8. Fry them in oil until crispy and keep aside.
9. Mix and melt all cheese together in microwave.
10. For the plating, stack potato fries on top of each other, (refer in image).
11. Pour warm melted cheese over it.
12. Drizzle it with thousand island sauce, and pour ranch sauce over them, covering the plate.
13. Garnish it with pickled jalapeno, fried sweet potato juliennes, sakura cress and serve hot.
