Sweet ricotta-filled fried pastries are a famous Sicilian treat - serve them freshly made with an espresso for the perfect pick-me-up
You will need cannoli moulds for this recipe but it's worth investing in them-nothing beats homemade cannoli.
1 HOUR RESTING CHILLING MAKES 12 A LITTLE EFFORT
plain flour 150g
caster sugar 25g
baking powder a pinch
ground cinnamon a pinch
lemon ½, zested
unsalted butter 30g, melted
egg 1, separated
marsala wine 2 tbsp
sunflower oil for deep-frying FILLING
ricotta 250g
icing sugar 3 tbsp
mascarpone 100g
orange or lemon
