CHILLI CON CARNE

INGREDIENTS

•1 cup dried kidney beans
•1.5kg beef chuck steak
•2 litres (8 cups) water
•1 tbsp olive oil
• 2 medium brown onions, chopped coarsely
•2 garlic cloves, crushed
• 2 tsp each ground coriander, cumin and sweet paprika
•½ tsp cayenne pepper
•800g canned crushed tomatoes
•2 tbsp tomato paste
•4 green onions, chopped coarsely
•2 tbsp fresh coriander, coarsely chopped
• 1/3cup pickled jalapeño chillies, finely chopped

METHOD

1 Place beans in a medium bowl. Cover with water and stand overnight. Drain.

2 Place beef and water in a large saucepan. Bring to boil. Reduce heat, simmer, covered, for 1 ½ hours.

3 Drain beef in a large muslin-lined strainer over a large heatproof bowl. Reserve 3 ½ cups of cooking liquid. Using two forks, shred beef.
