A quick Google search for exotic vegetables will show results of asparagus, avocado, kale, yellow squash and brussel sprouts. These vegetables also often show up on your Instagram feed as the latest food trends. Over the past few decades, they have become less ‘fancy’ thanks to the enterprising, new age farmers who started growing them in India in the early 2000s. These once-exotic-but-now-homegrown vegetables have suddenly become accessible to chefs, and will soon be available to home cooks through their arrival in local markets. Today, it’s hard to come by a restaurant menu that doesn’t feature them.
