Easy meals FOR ONE

One-pan Mediterranean pork chop

An all-in-one dinner that's smartened up with a herby salsa verde.

SERVES 1 READY IN 20 mins

*1 pork chop

* 10g butter

*3 sprigs thyme

* 100g frozen Mediterranean vegetables

* 1tsp smoked paprika

*1 garlic clove, crushed

* 1tbsp sherry or wine vinegar

*50g chickpeas, drained

FOR THE SALSA VERDE

*1 garlic clove, crushed

* 1tbsp capers

* Handful mint and parsley leaves

* 2tbsp olive oil

* 1tsp lemon juice

1 Whizz the salsa verde ingredients in a small food processor. Season to taste and set aside.

2 Heat a frying pan over medium-high heat. Holding the pork chop with tongs, sear the fat for 1 min to start to render it. Fry on each side for 3-5 mins, until golden brown. Add the butter and thyme for the final 1 min of cooking, basting the chop for extra flavour. Transfer to a plate, cover with foil and leave to rest.
