Timeless classics cooked with the convenience of a slow cooker offer traditional, hearty goodness. As we settle into the cooler months, you will be pulling these set-and-forget recipes out time and time again.

Osso buco with gremolata crumb
SERVES 4 PREP + COOK TIME 8½ HOURS
4-6 pieces (1.2kg) osso buco (beef shin)
¼ cup (35g) plain flour
2 tablespoons extra virgin olive oil
1 medium (120g) carrot, peeled, chopped finely
2 sticks of celery, chopped finely
1 medium (350g) leek, white part only, chopped finely
½ cup (125ml) white wine (or additional beef stock)
2 tablespoons tomato paste
2 cups (500ml) beef stock
250g cherry tomatoes
2 bay leaves
2-3 sprigs fresh thyme
mashed potatoes, for serving
GREMOLATA CRUMB
1 tablespoon extra virgin olive oil
¼ cup (25g) panko breadcrumbs
1 clove garlic, crushed
1 teaspoon finely grated lemon rind
¼ cup coarsely chopped parsley
1 Season the osso buco with salt then lightly dust both sides of the meat in flour.
