Chicken schnitzel & apple slaw

SERVES 2 PREP + COOK TIME 30 MINUTES

1 large (300g) chicken breast fillet, halved horizontally
¼ cup (35g) plain flour
1 egg
1 cup (75g) panko (Japanese) breadcrumbs
2 tablespoons finely grated parmesan
1 tablespoon chopped flat-leaf parsley
1 clove garlic, crushed
2 tablespoons extra virgin olive oil
20g butter
lemon wedges, to serve
