THE FINAL DRINK OF THE NIGHT IS MORE THAN JUST TRADITION – IT’S A LINGERING warmth, a way to savour the moment before the evening fades. And whether it’s the smooth embrace of a spiced rum, the bittersweet complexity of an amaro, or the rich decadence of a muscat, Australia's distillers and winemakers are redefining the art of after-dinner drinks. While whisky, port and sauternes may have long dominated the digestif scene, there are more ways than ever to end your night on a high note.

A SMOOTHER ALTERNATIVE: RUM & RUM LIQUEURS

Rum is a softer, spicier option for those not keen on the traditional nightcap of whisky. Spiced rum makes for a versatile dessert companion, pairing well with sticky date pudding or crème brûlée. Meanwhile rum liqueurs offer a lower-alcohol alternative that still delivers complexity. Served neat or over ice, they bring the same warmth but with a dessert-like appeal. A rum liqueur with caramel and vanilla notes is the perfect segue from dinner to relaxation.
