But one city cafe has launched pancakes with a difference.

At Sipping Boba you will find the biggest, fluffiest pancakes that are so light it's like eating a cloud.

The Japanese soufflé pancakes are served with a variety of toppings, including strawberry, biscoff, matcha and pistachio.

The airy, pillowy texture comes from whipping egg whites and folding them into the batter.

Kabitha Begum, who runs Sipping Boba in Ilkeston Road with her partner Wasim Ali, said: "I tried soufflé pancakes in Leicester and London and enjoyed them so much I wanted to do something similar. You don't feel heavy afterwards."
