Chef Nina Curtis, who prepared a special menu for PM Modi's state dinner in the US, has a soft spot for jackfruit. Curtis highlights the qualities of young green jackfruit, noting, "Its mild flavour and meaty texture make it an excellent substitute for animal meat, particularly in dishes like BBQ sandwiches, tacos and curries. The adaptability of jackfruit empowers chefs to craft delectable and satisfying vegan versions of traditional non-vegan recipes." But jackfruit isn't just for savoury dishes; when ripened, it can shine in sweet creations too. Curtis adds, "Its ability to star in both savoury and sweet dishes makes it a standout ingredient for those following a vegan lifestyle."
