Make the most of APPLES

Upside-Down Apple Caramel Tarts

MAKES 8

PREP & COOK 25 MINS

■ 2 medium red apples

■ 2 sheets frozen puff pastry, just thawed

■ 2 tbsp caramel spread, warmed, plus extra to drizzle

■ 1/3 cup almond meal

■ 1/3 cup spreadable cream cheese

■ Whipped cream, to serve

1 Grease two large oven trays. Line with baking paper.

2 Cut each apple into four thick slices from stem top to base. Cut each pastry sheet into four squares.

3 Drizzle caramel in eight sections on prepared trays. Top with apple slices (one on each). Sprinkle with almond meal. Dollop over cream cheese. Place a pastry square over top of each stack. Press around edges to seal pastry onto tray. Lightly spray with cooking oil.

4 Cook in a 200C preheated oven for about 15 mins, or until pastry is golden on top.

5 Invert warm tarts onto serving plates. Serve with cream and extra warmed caramel.

TIP

You can use any type of red-skinned apples for this recipe.
