Four low-effort dinners that practically cook themselves

Simply Delicious

Mississippi Chicken Kebabs

Inspired by our reader-favorite Mississippi Pot Roast, these six-ingredient skewers are great for cookouts or weeknight dinners.

ACTIVE 30 MIN. - TOTAL 1 HOUR

SERVES 6

2 (1-oz.) envelopes ranch dressing mix

2 (1-oz.) envelopes au jus gravy mix (such as Knorr)

1 (16-oz.) jar whole pepperoncini peppers, divided

½ cup canola oil, divided, plus more for grill grates

3¾ lb. boneless, skinless chicken breasts, cut into 1½-inch cubes

2 red onions, cut into 1½-inch pieces

12 (10-inch) skewers

Chopped parsley, for garnish

1. Stir together ranch dressing mix, gravy mix, ¼ cup pepperoncini brine, and ¼ cup oil in a large bowl. Add chicken pieces, and toss to coat; cover and let stand at room temperature for 30 minutes.

2. Meanwhile, preheat grill to medium-high (400°F to 450°F). Thread chicken, pepperoncini peppers, and onion pieces onto skewers. Drizzle with remaining ¼ cup oil.

3. Place kebabs on oiled grates; grill, covered, turning every 2 minutes, until a thermometer inserted into chicken registers 165°F, about 10 minutes total. Garnish with chopped parsley.

HAMBURGER HEROES

Burgers are not likely the first thing that comes to mind when thinking about Southern food. Barbecue, in its many local variations, has been so deeply ingrained in its association with the region’s cuisine that it’s difficult to imagine anything else. But like barbecue joints, there are burger joints that have histories that stretch back over a century with multigenerational traditions and ownership.
