PASTA PARTY
Linguine with Arugula Pesto

1. Heat oven to 450°F. On large rimmed baking sheet, toss 1 small head cauliflower (1/2 lbs; cored and cut into small florets) with 3 Tbsp olive oil and 1/2 tsp each kosher salt and pepper and roast, tossing halfway through, until golden brown and tender, 20 to 25 min.
2. Meanwhile, cook 12 oz linguine per pkg. directions. Reserve 1/2 cup pasta cooking water, drain pasta and return to pot.
3. While pasta cooks, in food processor, pulse 2 scallions (roughly chopped), 1 Tbsp fresh lemon juice and 3 cups baby arugula (from one 5-oz pkg.; reserve remaining for tossing) to chop finely. Add 2 cups basil leaves, 1/3 cup each grated Parmesan and cottage cheese and 1/2 tsp each salt and pepper and pulse to chop basil. Scrape down sides; then, with machine running, gradually add 2 Tbsp oil and puree until smooth.
4. Toss pasta with pesto to coat, then toss with reserved arugula, adding a couple of Tbsp of reserved pasta water as needed to wilt arugula slightly. Fold in cauliflower and serve topped with more grated Parmesan, lemon zest, red pepper flakes and a drizzle of oil if desired.
