At Hawkeye & Huckleberry Lounge, Brian Malarkey’s new restaurant in Bend, Ore., the chef wanted all the proteins to be local. “Every great steakhouse needs a shrimp cocktail,” he notes, “but Oregon only has bay shrimp — big on flavor, small in size.” Malarkey knew he had to get creative. “I turned the shrimp into a paste, spread it on dill brioche and fried it up,” explains the TV personality. “It’s a fun, shareable twist that captures all the flavors of a classic shrimp cocktail.”
