Chunky Chopped Salad
Our crunchy mix of tomatoes, celery and red onion gets extra flavor, thanks to convenient seasoned croutons
- 3 Tbs. olive oil
- 2 Tbs. red wine vinegar
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1½ tsp. garlic powder
- 3 tomatoes, cut into ³/4" pieces, about 3 cups
- 2 ribs celery, sliced
- 1/2 cup celery leaves, coarsely chopped
- 1/2 cup parsley leaves, coarsely chopped
- 1/3 cup chopped red onion
- 1 cup herb croutons
In large bowl, whisk together olive oil, vinegar, oregano, salt, pepper and garlic powder until blended and emulsified. Add tomatoes, celery, celery leaves, parsley leaves and onion; toss until evenly coated and combined. Transfer to serving bowl; top with croutons.
Easy variation: Make it Greek Chopped Salad. Replace 1 Tbs. vinegar with 1 Tbs. lemon juice. Make salad as directed; sprinkle with 1/4 cup crumbled feta cheese.
