Blush cocktail

MAKES 8-12 GLASSES

  • 1 x 75cl bottle fruity rosé wine, chilled
  • 50ml Cointreau
  • 75ml peach schnapps
  • 1-2 peaches, thinly sliced
  • 1 Pink Lady apple, thinly sliced
  • 700ml lemonade, chilled 1 Mix together all the ingredients in a large jug. Chill until ready to serve. Add ice, stir and serve in tumblers or wine glasses.

Per serving: 141-94 cals, Og fat, Og sat fat, 8.5-6g carbs

Dainty smoked salmon sandwiches

You might want to make double the amount, as they'll be gone in minutes!

MAKES 12 PREP 20 MINS COOK 5 MINS

  • 1tbsp olive oil
  • 3 sticks celery, very thinly sliced
  • Zest and juice of 1 lemon
  • 1/2tsp caster sugar
  • 1 cucumber, peeled, deseeded and thinly sliced
  • ½ small bunch of dill or parsley, chopped
  • 1tbsp small capers, roughly chopped
  • 300g smoked salmon
  • Small loaf of rye bread, approx 400g, thinly sliced

1 Heat the oil in a pan, add the celery, cover and cook over a low heat for 5 mins. Add lemon zest and juice, sugar and season. Cook for a few mins until the liquid has evaporated. Leave to cool.

2 Toss cucumber in a colander with 1tsp flaked sea salt. Leave for 15 mins, rinse, drain and pat dry on kitchen paper. Mix with celery, dill or parsley, and capers.

3 For the sandwiches, lay salmon onto bread and top with a spoonful of the pickled vegetables.

Per serving: 145 cals, 5g fat, 1g sat fat, 16g carbs

Jolly-good game sausage rolls

These may be dinky, but the venison sausages pack a really meaty flavour.
