IRELAND might be most famous for stouts and whiskeys but scientists have discovered the yeast first used in lager originated in forests here too.
The yeast used to brew cold beer is known by the scientific name Saccharomyces pastorianus, but it developed from another one called Saccharomyces eubayanus.
Its ancestor has remained a mystery - until students at University College
