1 Combine coconut milk, cream, sugar, lime rind and vanilla in a medium saucepan over a medium heat. Cook, stirring, until sugar is dissolved and mixture is hot. Do not boil.&nbsp;Remove. Stand for 5 minutes.&nbsp;Strain into a medium jug.
2 Sprinkle gelatine over 2 tblsps of cold water in a small heatproof jug. Stand jug in a small saucepan of simmering water. Stir until gelatine is dissolved. Remove.&nbsp;Stir into hot milk mixture.
3 Divide mixture evenly among four serving glasses [11-cup capacity). Cover the glasses and refrigerate for about 6 hours, or overnight, until panna cotta is set.
4 Using a melon baller, scoop balls from the rockmelon.&nbsp;Transfer to a medium bowl.&nbsp;Stir in passionfruit pulp and extra sugar.
5 To serve, spoon fruit mixture over the panna cotta.&nbsp;Decorate with mint leaves.
