MOTHER'S DAY MADE DELICIOUS

Tomato focaccia with ham

Prep time: 40 minutes

Makes: 4

METHOD

1. Preheat oven to 200°C.

2. Toss tomatoes with garlic, basil, olives, chilli, salt, pepper and half of the olive oil. Marinate for about 10 minutes.

3. Grease a 20 x 25cm baking tray and press dough down on the base of the tray.

4. Spoon tomatoes on top and use your fingertips to press them into dough to make small impressions.

5. Drizzle with remaining oil and bake for 20-25 minutes or until cooked through.

6. Top with rocket, ham and parmesan.

Easy passion fruit mousse

Prep time: 20 minutes, plus setting

Makes: 4-6

METHOD

1. Beat together the condensed milk, cream cheese and pulp until smooth.

2. In a separate bowl, whip the cream to form stiff peaks.

3. Whisk ¹/4 of the whipped cream into the condensed milk mixture.

4. Fold in the remaining cream until all ingredients are well combined.

5. Place crumbled biscuits into each glass to create a base for your mousse.

6. Spoon the mixture into serving glasses.
