INGREDIENTS 1kg mixed dried fruit ½ cup sweet sherry 250g dairy-free spread ½ cup soy milk 1¼ cups brown sugar, firmly packed 1¼ cups gluten-free plain flour 1 cup gluten-free baby rice cereal (see Tip) ½ cup maize cornflour ½ tsp baking soda 1 tsp ground cinnamon 3 eggs, beaten lightly
