Late spring is filled with road trips, outdoor sports and long weekends at the beach – all activities requiring plenty of sustenance. To avoid eating out too much, I like to prepare a tonne of homemade goodness to satisfy any snack hankering. These recipes are simple affairs using everyday pantry ingredients. Whether you’re looking for lunchbox fillers, picnic fare, or wholesome homemade snacks for when you’re enroute to a destination, I’ve got you covered with these delicious creations to fill your Tupperware and tins.

Vegan sausage rolls MAKES 15

INGREDIENTS 1 can chickpeas or lentils, drained 2 cups pre-roasted vegetables 2 Tbsp vegan mayo or aioli 1 Tbsp sweet chilli sauce 3 sheets of puff pastry Chilli flakes and smoked paprika for sprinkling
