SUMMER LOVESOME

OVEN PANCAKE WITH CHERRIES AND BERRIES

If your children love pancakes as much as mine, then they'll probably love this too. It is easy to make and you don't have to stand over the frying pan endlessly flipping pancakes! This breakfast is simple and fun, and you can top it with whatever fruit you like!

SERVES 4-6

Preparation time: 10 minutes Cooking time: 30 minutes

1. Set a baking dish, measuring roughly 23 x 33cm (9 x 13in), in the oven and preheat to 220C/fan 200C/gas 7.

2. Once hot, place the butter into the dish and leave it to melt.

3. Meanwhile, whisk the milk, eggs, vanilla, flour, baking powder and granulated sugar together.

4. When the butter is completely melted (before it browns or burns), pour the batter over a metal spoon into the baking dish. Handle the hot dish with care.

5. Cook for 25-30 minutes or until the pancake is set in the middle and the edges are puffed up and golden brown.

6. Remove from oven. Squeeze over the lemon juice and icing sugar and decorate with the cherries and berries.

HARISSA ROASTED PANEER AND RED PEPPER PITTAS

Smoky harissa and sweet peppers work perfectly together, offering up a tasty and filling lunch.

SERVES 2

Preparation time: 5 minutes

Cooking time: 15 minutes 

1. Mix the dressing ingredients together, set aside.
