DEEP-DISH APPLE PIE

FOR THE CRUST

2½ cups all-purpose flour, plus more for dusting

12 tablespoons (1½ sticks) cold unsalted butter, cut into pieces ⅓ cup cold vegetable shortening

1 tablespoon granulated sugar

1 teaspoon salt

3 tablespoons ice water

3 tablespoons cold vodka (or more ice water) Coarse sugar, for sprinkling

FOR THE FILLING

4 pounds mixed apples (such as Rome, Gala and McIntosh)

⅔ cup granulated sugar

2 tablespoons fresh lemon juice

6 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 tablespoons heavy cream, plus more for brushing

1 teaspoon ground cinnamon or apple pie spice
