Reshma Yashwant Bhosale is a passionate and motivated individual, committed to learning and experiencing various aspects of the food industry. She holds a diploma in food production and bakery from Hospitality Training Institute and a degree in commerce from Mumbai University. Reshma has been working as a Pastry Chef at The Orchid Hotel in Mumbai since 2018, where she has honed her skills and gained extensive knowledge in the field. Prior to this, she served as a pastry sous chef at The Orchid and Radisson Mumbai and worked as a Chef de Partie and Demi Chef de Partie at The Club in Mumbai. What are the current hot trends in Indian Bakery industry?
Post-pandemic, we have observed a huge change in preferences amongst the Indian consumers. Indians have become more health-conscious and prefer healthy, gluten-free bakery products, and preservatives-free desserts.
How did you become a Pastry Chef?
I have always been a great foodie since my childhood. When my father used to bring us cakes, chocolates or puffs, I used to research and get into the nitty-gritty as to what goes into the ingredients, methods of making a chocolate or a sponge or how better can this cake be presented. I used to make drawings of pastries and cakes.
This obsession drove me to the hotel industry, and I chose the bakery section of the kitchen, thanks to my curiosity that shaped me into a better pastry chef today.
What is your working (Cooking) philosophy?
I love to begin my day on a positive note. Accurate recipe and perfect cooking temperature is most important and plays a vital role in baking and confectionery.
What are your Hot Selling bakery items?
Healthy Viennoiseries like croissant, pain-auchocolat, cruffins. From cakes and entremets - Raspberry Opera and Caramel Tart, Coffee and Chocolate truffle.
