Winter WARMERS

BROCCOLI & CHEDDAR SOUP

SERVES 4 / COOKING & PREPARATION: 20 MIN

This is a decadent soup to add to your weekly menu, especially in the cold winter months. If broccoli and cheese are your thing, this soup is perfect for a main meal or starter.

  • 15ml (1T) olive oil
  • ½ onion, finely chopped
  • 1 clove garlic, minced
  • 1 large carrot, grated
  • black pepper
  • 5ml (1t) paprika 
  • 1 head broccoli, broken in florets
  • 5ml (1t) chicken braai spice
  • 500ml (2c) chicken stock
  • 250ml (1c) milk 
  • 30-45 ml (2-3T) cornflour
  • 250ml (1c) fresh cream
  • 60g cheddar cheese, grated

TO SERVE 

slices of toast

1 Heat the oil in a saucepan on medium heat. Add the onion and garlic and braise for about 1 minute.

2 Add the carrot and stir, then season with pepper. Add the paprika and broccoli florets and fry for about 1 minute.

3 Add the braai spice and fry for about 2 minutes. Add the stock and simmer for 8-10 minutes.

4 Mix the milk and cornflour together and add to the soup.

5 Add the fresh cream and bring to a simmer. Season with more pepper.

6 Add the cheddar cheese and simmer for 5 more minutes.

7 Serve hot with a slice of crisp, buttery toast.
