Quinoa porridge with berries and Brazil nuts
SERVES 2
INGREDIENTS
- 250ml almond milk, plus extra if desired
- 100g quinoa, rinsed
- 1 tsp honey
- 3 tbsp fresh or frozen mixed berries
- 1 tbsp Brazil nuts, roughly chopped
1. Warm 2/3 of the almond milk in a saucepan over a medium heat, then add the quinoa. Stir well.
2. Bring to a simmer and cook for about 15 minutes, stirring, or until all the liquid is absorbed.
3. Remove the quinoa porridge from the heat and stir in the honey and berries. Divide between two bowls.
4. Scatter over the chopped nuts. Pour an extra 2 or 3 tablespoons of almond milk over each serving if you prefer a thinner consistency. Serve.
Greek-style fritters
MAKES 8
INGREDIENTS
- 1 large courgette
- 1 tbsp chopped dill
- Grated zest and juice of 1 lemon
- 1 large free-range egg
- 50g self-raising flour
- 40g feta or mozzarella cheese
- 1 tbsp olive oil
- Salad of lettuce, tomatoes, cucumber and peppers, and tzatziki, to serve
1. Grate the courgette into a sieve. Press with the back of a spoon to remove the moisture.
