Making healthy foods before lunchtime is one of the best ways to ensure kids eat well without having to scramble for lunch when they are hungry. These recipes are quite easy and can be enjoyed by toddlers and big kids alike. You can prepare these in the morning or right before lunch for a healthy meal.
1- Pink Curd Sandwich
Ingredients:
½ cup chopped cabbage
½ cup chopped beetroot
1 tomato (chopped)
Whole wheat bread
½ cup curd
1 tsp green chillies (chopped)
2-3 tsp mayonnaise
Method:
Mix the cabbage, beetroot, curd and chillies in a bowl. Apply mayonnaise to toasted bread slices. Add a spoonful of the mixture and cover with a slice. Cut into triangles and pack!
2- Beetroot Spaghetti
Ingredients:
2 medium beetroots
100 gms spaghetti
Olive oil
2 Garlic cloves
½ Lemon
Salt &pepper
30 gms feta cheese
Mint leaves
Walnuts
Method:
Cook the spaghetti and set aside. Cook down the beetroots in a pan of boiling water until really tender and leave to cool. Remove the skin and mash to a coarse paste. Add olive oil in a frying pan; add the garlic (sliced), lemon zest with salt and pepper. Cook for a few minutes until the garlic is slightly brown. Add the mashed beetroot, spaghetti and mix well. Squeeze the lemon and season as needed. Add the crumbled cheese, mint leaves and toasted walnuts.
