ORANGE DRUMSTICKS WITH RICE & GREEN BEANS

SERVES 4 PREP 10 MINS

• 1 tbsp olive oil, plus 2 tsp extra

• 1.5kg chicken drumsticks

• 1 cup chicken stock

• ½ cup cranberry jelly

• 1 orange, grated zest, juice

• 200g green beans, trimmed

• steamed rice, to serve

1 Preheat oven to 180°C.

2 In a large ovenproof frying pan, heat oil on medium. Cook drumsticks 6-8 mins, turning on all sides, until golden brown.

3 In a small jug, mix stock, jelly, zest and juice together. Pour over chicken and bring to simmer.

4 Transfer to oven and bake 30-35 mins, turning halfway, until cooked through and sauce thickens.

5 Place beans in a microwave-safe bowl with a splash of water. Cover with plastic wrap and microwave on High, 1 min. Drain well, toss in extra oil and season to taste.
