Serves 4 Prep and cooking time: 30 min

For the gnudi:

• 10g fresh flat leaf parsley, chopped

• 5g fresh thyme leaves

• 500g good-quality ricotta cheese

• 50g Parmesan cheese, grated

• ½ cup flour, sifted

• ¼ tsp ground nutmeg

• grated zest of 1 lemon

• 2 tbsp freshly squeezed lemon juice
