ABDULLA SOBAH, CHEF DE CUISINE, SONEVA FUSHI

Chef de Cuisine at Soneva Fushi, chef Abdulla Sobah is arguably the most acclaimed chef in the archipelago. Having won a plethora of accolades to his name, he is most proud of receiving the President’s Award for outstanding services to the cooking industry in 2015. While he is famed for his Maldivian cuisine, the chef also specialises in Sri Lankan, Vietnamese, and Thai food using the skills he picked up while working in those countries. “As a local Maldivian, I grew up enjoying my mother’s and grandmothers’ cooking—something that inspired me to adapt those recipes, add my own flavours and local ingredients for our guests to enjoy when they dine with us,’’ says chef Sobah, who has been with Soneva Fushi since 2011.

AN UNMISSABLE DINING EXPERIENCE

“Kandu Kukulhu carpaccio is one of the best modern-traditional dishes that one must try in Maldives,” remarks chef Sobah.
