Many sushi restaurants will have their specialty rolls specifically designed by their master sushi chef. These rolls are like their signature sushi delicacies which differentiates them from other sushi restaurants. I find it exciting to taste their signature rolls and determine what the master sushi chef has created to have the customers come back for more. Some of the specialty rolls are named after the master sushi chef, their regular customers and even local football and hockey teams.

Who or when was sus hi created? Many would assume this delicacy was created in 2 Japan. The belief is it was actually started in Southeast Asia. Narezushi, fermented fish wrapped in sour rice, originated around the Mekong River before spreading to China, Japan and later the US. In the 1820’s, Hanaya Yohei is considered the creator/ marketer of the modern nigiri sushi. Yohei opened the first sushi place in Ryogoku district of Edo.
