Pepper’s Lonely Hearts Club Band, de The Beatles”. Y se fue.
El 20 de mayo de 2012, la ciudad italiana de Módena se vio asolada por un terremoto de 6.1 grados. La zona es el epicentro de la producción del queso parmesano: cada año se producen unos 360,000 discos de aproximadamente 20 kilos cada uno y el terremoto puso en riesgo toda esa producción. Massimo Bottura se reunió con el Consorcio del Parmesano y creó una receta de parmesano, Risotto Cacio e Pepe, basada en cocinar el arroz con este legendario queso. “Quiero enseñarle a todo el mundo lo que se hace en Módena”, nos cuenta en su ciudad natal Bottura, en la que nació en 1962. “En Japón, en Londres, en Nueva York, en todas partes... Más de 40,000 personas cocinando este plato. Vendieron toda la producción, nadie se quedó sin trabajo. La comida también puede ser un alimento social, un fogón para el cambio”.
