• 4 extra-large eggs
• 5ml vanilla essence
• 200g (375ml) cake flour
• 5ml baking powder 100g butter, melted
• 50g butter, melted
• 160ml full-cream milk, heated
• 50g (125ml) cocoa
• 290g (560ml) icing sugar, sifted
• a pinch of salt
• about 500ml coconut
• 250ml whipping cream
• 10ml cherry liqueur, brandy or rum 80g dark chocolate, melted
• cherry jam
• 12 maraschino cherries
• If you prefer classic lamingtons, stop at step 6 and store the squares in an airtight container for up to three days.
