The people: The two chefs behind Belly of the Beast, Neil Swart and Anouchka Horn, both have very fond memories of making snoek on the braai – always with an apricot glaze and sweet potatoes on the side. “We wanted a recipe that paid homage to this tradition,” says Neil.
