PREP TIME 30 MINUTES (+ REFRIGERATION & STANDING) MAKES ABOUT 2 CUPS

PASSIONFRUIT BUTTER

4 eggs, beaten lightly, strained

185g unsalted butter, chopped

¾ cup (165g) caster sugar

½ cup (80ml) lemon juice

1 cup (250ml) passionfruit pulp

LIME BUTTER

4 eggs, beaten lightly, strained

185g unsalted butter, chopped

1½ cups (225g) caster sugar

½ cup (125ml) lime juice

¼ cup (60ml) lemon juice

1 tablespoon finely grated lime rind

green food colouring

BLOOD ORANGE BUTTER

4 eggs, beaten lightly, strained

185g unsalted butter, chopped

¾ cup (165g) caster sugar
