1. HAM & BRIE PASTRIES

Roll 1 sheet frozen puff pastry to a 12-in. square; cut into sixteen 3-in. squares. Place 1 tsp. apricot preserves in center of each square; top with 1 slice ham and 1 cube Brie cheese. Overlap 2 opposite corners of pastry over filling; pinch to seal. Bake on parchment-lined baking sheets at 400° until golden brown, 15-20 minutes.

2. GERMAN PIG IN A BLANKET

Unfold 1 sheet puff pastry; spread 13 cup stone-ground mustard to within 72 in. of edges. Layer with 1/2 cup sauerkraut and 4 chopped cooked bratwurst links. Roll up jellyroll style. Cut into 16 slices. Place on greased baking sheets. Sprinkle with 1 Tbsp. caraway seeds. Bake at 400° until golden brown, 18-20 minutes.

3. CHORIZO TACOS

In a skillet, heat 2 tsp. canola oil over medium-high heat. Add 1 small chopped onion and 1 chopped seeded poblano pepper; cook and stir until tender, 5-7 minutes. Add 1 lb. fresh chorizo; cook, breaking meat into crumbles, until fully cooked, 12-15 minutes. Drain. Serve on warm mini flour tortillas. Top as desired.
