THE DRY INGREDIENTS

Flour, brown sugar and breadcrumbs are bolstered by spice, specifically nutmeg, cinnamon, cardamom and ginger. These dry ingredients help to soak up the melted suet, while nibbed almonds bring a textural element.

THE FAT

Suet (raw beef fat) creates that almost sticky texture we love about a Christmas pudding. It’s a hard fat, meaning it will melt slowly through the mixture, binding everything together with ease.
