WHAT YOU NEED

250g butter, softened + extra, to grease
2 tsp vanilla extract
380g castor sugar
6 large eggs, at room temperature
435g cake flour
1 tsp baking powder
½ tsp bicarbonate of soda
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground cardamom
½ tsp ground cloves
½ tsp ground nutmeg
zest of 2 oranges
250ml (1 cup) buttermilk
SWISS MERINGUE ICING
4 egg whites
