TODAY, POOR LAND MANAGEMENT HAS LED TO SOIL DEGRADATION IN MUCH OF THE WORLD. UKRAINE IS ONE OF THE RARE PLACES WHERE A HIGHLY FERTILE SOIL, CHERNOZEM, REMAINS. ITS BLACK APPEARANCE COMES FROM THE RICH PRESENCE OF ORGANIC MATTER, WHICH ATTRACTS AND RETAINS NUTRIENTS. THIS IS WHY THE LAND IN UKRAINE YIELDS AN ABUNDANCE OF CROPS.

Ukrainian garlic is known for its strong, spiced flavour and rich aroma. In Ukraine, garlic is planted after crops such as legumes and cereals, which enrich the soil. It would not be planted after onions or potatoes, as they are prone to similar pests and diseases. The soil is also allowed to rest before the autumn planting. Aside from Lautrec, a pink variety of garlic with French ancestry, you will also find Red Duke, a spicy and fragrant garlic originally from Czech Republic; Silver, large bulbs of silver-hearted garlic; and Elephant garlic, which can reach 15cm in diameter, and is known for its delicate taste.

To get a sense of Chef Aeron Choo’s work ethic as well as personality, we first have to tell the story of meeting her for the first time in her restaurant, Kappou Japanese Sushi Tapas Bar at Fortune Center. She’s working with her kitchen team, scrutinising the ingredients she has prepared, making sure that the slices of tuna she has made is up to scratch, prepping and discarding elements that she is dissatisfied with that don’t work with the dishes. Then, she pulls out a 1.7kg spiny lobster, fresh from the tank, and very much alive. When the lobster is clearly flailing from being yanked out of the tank it had been swimming in, she takes time to stroke, pet the lobster and whisper sweet nothings to calm the creature down.
