Blackberry and elderflower fool
Summer berries and floral-scented cream make for an elegant sweet.
SERVES 4-6 READY IN 30 MINS
* 300g frozen blackberries, reserving a few to decorate
* 120g golden caster sugar
* 1tsp vanilla bean paste
* Juice ½ lemon
* 300ml double cream
* 3tbsp elderflower cordial
* 2tbsp runny honey
* 150g thick Greek-style yogurt
* 3-4 shortbread biscuits, crumbled
