Hilton Dubai Palm Jumeirah

unique concept restaurant, I took in the views of Palm West Beach as I sat outside for breakfast.

The beautiful Hilton Dubai Palm Jumeirah is a must-stay. With outstanding views of the city's Persian Gulf and Dubai Marina skyline, the destination opened in 2022 can be found at Palm West Beach on Palm Jumeirah island.

After negotiating the evening traffic from Dubai airport into the city, I stepped in through the hotel's reception and was just as struck by its vast and expansive interior as I was the warm welcome from the staff - they even personally delivered my luggage to one of the hotel's King guest rooms.

Inside I found myself in the lap of luxury. Its elegant design features marble hallway flooring and wooden laminate hideaway units containing a spacious wardrobe room, a safe, and a minibar. A separate counter area features a kettle and coffee machine, a range of cups and saucers and bottled water.

It has a huge, comfy serenity bed and high-spec bedding.

On the bedside cabinet there is even a novel "pillow order form" so you can request a firmness according to your needs.

There's plenty of places to sit and relax, with a two-seater sofa, a single chair, and expansive desk and chair area, designed to make it feel like a home away from home.

Roasted shallot and pumpkin salad

Preheat the oven to 180°C/160°C fan/gas mark 4. Peel the pumpkin, then halve and remove the seeds. Cut into 2cm thick slices. Add to a large baking tray with the shallot halves, oil, cumin, coriander and seasoning. Toss well and cook for 25-35 minutes until deeply golden.
