While Scotch distilleries remain the most prestigious and prominent, recent years have seen the rise of their American cousins. To be called Scotch, the spirit must be made with malted barley and distilled in Scotland. It is little-known, however, that in the US, there is a slew of whiskey-making styles, using various types of cereal grains, that are even governed by US federal law.
