PRESIDED OVER by the Fillioux family, the prestigious House of Hennessy determined that a chef, and not just any chef, would helm the Hennessy X.O Odyssey 2017—a limited engagement cognac and dinner pairing. The maison, whose craft and graft in grapes spans 250 years, sought someone whose plates place nature’s bounty on a deserving pedestal.
