Pack your plate with colourful ingredients to make you look and feel great
Grilled mackerel and couscous salad
This simple fish dinner is great whether it's made in the pan or on a barbecue, with accompanying flavours that taste super-fresh.
SERVES 4 PREP 10 MINS COOK 15 MINS
* 200g cherry tomatoes
* 1 small red onion, cut into wedges
* 2tbsp sesame or extra-virgin olive oil
* 2 garlic cloves, sliced
* Zest and juice 1 lemon
* 4 mackerel fillets, deboned
* 1tbsp runny honey
* 200g giant wholewheat couscous
* 50g radishes, thinly sliced
* ½ cucumber, sliced, cut into half-moons
* 20g parsley, leaves picked and chopped
1 Toss the tomatoes and onion with ½tbsp of the oil, the garlic, and the lemon zest and juice, then chill until needed.
2 Heat the grill to high. Brush the mackerel on both sides with the remaining ½tbsp oil and the honey, and season. Cook the mackerel skin-side up for 3-4 mins until a little charred, then flip and cook for 1-2 mins, until cooked through. Set aside, covered.
3 Thread the tomatoes and onion on to skewers, then cook under the grill on a foil-lined tray, turning frequently until charred and softened.
4 Cook the couscous according to the pack instructions. Mix in the tomatoes, onion, radishes and cucumber.
5 Serve the mackerel and couscous topped with parsley and a lemon wedge, if liked.

* 100g vermicelli rice noodles
* 3 x 165g packs raw king prawns
* 2tbsp sesame oil
* 2 dolce romana lettuces, 10 outer leaves picked, the rest shredded
* 1 red chilli, thinly sliced
