BAKED SNAPPER

PREP + COOK TIME 1 HOUR SERVES 4

1 Preheat oven to 200°C/180°C fan. Rinse a 1.2kg whole snapper under cold water; pat dry with paper towel. Using a sharp knife, make 4 deep diagonal slashes across the flesh on both sides. Place a large piece of extra−wide foil on a work surface. Top with a slightly smaller sheet of baking paper, ensuring that both are longer than the fish. Place fish on baking paper.

2 Cover with another piece of baking paper and foil; scrunch edges together to seal. Carefully lift parcel onto a large oven tray. Bake for 45 minutes or until just cooked through. Carefully open fish parcel. Place under a hot grill for 5 minutes or until browned.
