Food editor Anna Glover solves your midweek cooking dilemmas with new simple recipe ideas
the dilemma
It’s all go! The kids are back at school and midweek evenings are full-on – so, what can you cook that takes very little time but the whole family will love?
the solution
You’ll need just 15 minutes to make these burgers. Versatile and easy, you’ll have dinner on the table in no time.
Midweek cooking tends to fall into one of three categories: out of time, out of ingredients, or out of energy. We all have around five to 10 dishes we fall back on when we’re stuck, and these burgers are super-speedy while still feeling like a filling family meal. If you’re catering for veggies, simply omit the chicken and add an extra slice of halloumi. Use any sauce your family loves, and any dip that you have in the fridge. You could even make your own hummus, red pepper salsa or chimichurri to use here, but when I’m pressed for time, I head for a bottle of lively chilli sauce and a tub of shop-bought hummus or another dip, depending on what we fancy.
