But for many, calculated meal plans fall by the wayside in favor of pre-packaged meats, store-bought slaw, and far-from-fresh salads. Beet, Black-Eyed Pea & Goat Cheese Burgers

SERVES 4

3 beets, peeled and chopped

1 cup rolled oats, gluten-free if desired

3 cups black-eyed peas, cooked

2 large pastured, free-range eggs

2 shallots, chopped

3 garlic cloves, minced

1 tablespoon Dijon mustard

â…“ cup soft goat cheese

1 teaspoon paprika

2 teaspoons dried rosemary

½ teaspoon Himalayan pink salt

½ teaspoon black pepper
