Truffle Roasted Potatoes

2 tablespoons olive oil, divided
4 large russet potatoes Salt Pepper
1 teaspoon dried thyme, divided
1 teaspoon white truffle oil
Preheat oven to 375 degrees. Pour 1 tablespoon of olive oil into a shallow cake or pie dish, spread evenly to coat, and set aside.
Slice potatoes into thin, ¼-inch thick rounds using a sharp knife or mandolin.
Layer potatoes in a circular pattern, moving from outer edge to center, overlapping the top layer with the gaps in the bottom layer until all potatoes are used. Sprinkle each layer with salt, pepper and dried thyme. Drizzle potatoes with remaining olive oil and t
