6 Ways With Christmas Leftovers

1 Christmas Cake Sundaes

Prep 20 mins + freezing time / Serves 4

1 litre vanilla ice-cream, softened

1 cup coarsely chopped cherries

½ cup coarsely chopped gingerbread

½ cup coarsely chopped milk chocolate

2 tbsps maple syrup

1 cup crumbled Christmas cake or pudding

250g strawberries, halved

125g blueberries

1. Place the ice-cream in a large bowl; fold through cherries, gingerbread, chocolate and maple syrup.

2. Place in a loaf pan or container and return to the freezer for several hours or leave overnight.

3. To make sundaes, layer scoops of ice-cream in chilled glasses with crumbled cake and fresh berries.

4. Suitable to freeze. Not suitable to microwave.

2 Roast Pork And Noodle Soup

Prep and Cook 25 mins / Serves 4

1 litre salt-reduced beef stock

2 tsps fish sauce

1 tbsp lime juice

1 tsp brown sugar

1 tbsp finely chopped lemongrass

½ small daikon, chopped finely

1 medium red capsicum, chopped finely

100g dried rice vermicelli noodles

1 cup bean sprouts

250g roast pork, sliced finely

½ cup Thai basil leaves

1 long red chilli, sliced finely

1. Combine stock, fish sauce, lime juice, sugar, lemongrass and 2 cups water in a large saucepan over medium heat. Bring to a simmer and stir until sugar has dissolved.

2. Add daikon and capsicum. Continue to simmer for another 5 mins.

3. Add the noodles and cook for 5-7 mins or until the noodles are soft.

4. Divide the soup between four bowls and top with the bean sprouts, pork, basil and chilli.

5. Not suitable to freeze or microwave.

3 Ham Fritters

Prep and Cook 25 mins / Serves 4

300g leftover roast potatoes

1 cup finely chopped sliced ham
