Ice-cream as an industry is growing at a galloping rate in India with almost 22% CAGR growth on an annual basis. This is predominantly due to changes in Indian eating habits. Compared to conventional ice-creams where preservatives were used for the making of ice-cream, now it is liquid nitrogen that is a major contributor, helping do away with the problem of crystal formation. Freshly made ice-creams is the next hot business opportunity and will constitute about 5% of the market share in the coming years, which means liquid nitrogen ice-cream parlour is estimated to be a Rs 2,250 crore industry across India of the existing Rs 45,000 crore industry it is as a whole.
